I remember as a kid visiting my grandma (Bubbie Hanna),

As I walked in, I was struck by the warm aroma of her famed chicken soup as it simmered in a big pot.

She would lovingly pour me a bowl and seat me at the small old and rickety kitchen table. Grandma's soup had a shiny gold appearance but more than anything else, its texture was truly devine.

What gave it its unique thickness?

Grandma's "secret sauce" was the chicken feet she added to the pot.

You see chicken feet are chock-full of collagen, and when you allow them to simmer, the collagen adds tremendous texture, taste and nutrional benefit to the chicken soup.

And now I can say that her story doesn't end here…

So I got down to work, first we dehydrated chicken feet to kill any bacteria and preserve them while not exposing them to heat which would make them brittle and then I smoked them to give them even more taste.

You know what, HOLY CHICKEN!

My dogs went absolutely nuts.
