Following the dissolution of this alliance in 2007, the winery entered a period of deep exploration to define Altair's unique identity. Advances in geological studies and refined agricultural practices allowed for a more authentic expression of the terroir. The arrival of winemaker Gabriel Mustakis in 2018 ushered in a new era for Altair, characterized by a modern winemaking approach. Mustakis's meticulous methods, including early harvests, gentler extraction techniques, cooler fermentations, and extended aging, led to a transformation of Altair into wines that blend sophistication with Chilean authenticity.
Since its founding, the winery has been equipped with state-of-the-art technology, including gravity-fed systems and fermentation and aging vessels made from various materials. Through its 20 vintages, Altair stands as a testament to the evolution of Chilean wine and the winery's commitment to expressing the unique character of the Cachapoal Andes terroir. Each bottle reflects the rich story of Viña San Pedro and its distinguished heritage. |
